Florida is a melting pot of people, cultures, flavors, and stories. Florida Pizza Pub was born from a desire to celebrate all of it through the universal language of great pizza.

Founded by husband-and-wife team Hillary and Matt Koester, the concept is rooted in both tradition and creativity. Hillary, a fifth-generation Floridian from Clewiston (“America’s Sweetest Town”), has spent over 20 years in the pizza world. Matt brings his own years of experience, steady grit, and a love for building something with purpose. Together, they set out to create a place that feels like home.  A place that is warm, welcoming, flavorful, and deeply connected to community.

At Florida Pizza Pub, the menu will reflect the diverse influences that shape our state—Caribbean, Latin American, Southern, Indigenous, coastal, and global traditions—blended with the timeless favorites every pizza lover knows by heart.
